July is the month to savor chanterelles, a seasonal delight. Mikhail Kuklenko, the brand chef for the RIBAMBELLE family restaurants, has created six exciting new dishes: bruschetta with stracciatella and fried chanterelles, baked potatoes with chanterelles and sour cream sabayon, omelette with Parmesan cream and chanterelles, lamb stew with chanterelles, chanterelle pate, and pizza with chanterelles.

When combined with other ingredients, tender and fragrant chanterelles create unusual combinations by lending a distinct scent of wild mushrooms and a faint touch of dried fruit to meals.
